Thick & Hearty Chili
Full of veggies, beans & meat - this twist on classic chili is a family favorite all winter long!
If I’m being completely honest, none of us actually like traditional chili. This was the first time I made it for the family & I’m happy to report that everyone loved it, even my soup hating husband.
The two aspects I hate about classic chili are how it’s so soupy & spicy. My first goal was to thicken it up, my mind went to goulash without the pasta. You could eat this chili with a fork on a plate if you wanted. It fills your belly & sticks to your bones - perfect for growing children and hard working husbands.
The second thing I did was bring down the spice level without making it bland. I decided to go with a BBQ twist by adding smoked paprika & bacon. The depth of flavors is magical without burning your tongue.
I am not the best about measuring spices, but I tried my best. The quantity of seasonings in the recipe are an estimate. I recommend tasting & seasoning the chili to your liking as it simmers. Remember, you can add more but you can’t take any out!
